When your partner’s family retires in Ecuador.. you go take a visit!

We did not spend as much time in Ecuador this time around as it was tagged on to the end of our Galapagos trip.. but I am sure we will be back. Filled with amazing produce, great hikes, and lovely people.

Ecuador has a lot to see.. I am almost tempted to call it a “hidden gem” (in the sense that there aren’t 100 “instagrammers” going there). The nature is so expansive, from lush rain forests at Mindo to the harsh volcanoes like Cotopaxi.

See below for some of my favourite photographs from our Ecuador trip.. which was incredibly hard to narrow down.

Hiking the Cuicocha crater was long but well worth it. We chose the “harder” way around in that you start with a huge incline. Gorgeous hike with continuous epic scenery!

Learning how to make coffee in Mindo from scratch was so enjoyable! Really an amazing experience as a coffee drinker myself ;)

The wildlife in Ecuador was amazing.. and we slowly became obsessed with bird watching! The cloud forests provided an abundant of adorable creatures to observe

Hiking Cotopaxi was one for the books.. our highest elevation to date with the summit being 5897 meters.. 19000 feet! The air was so thin and I am really proud of us for finishing this hike.

A quiet morning in Ecuador swinging at the end of the world. Because it was early and raining, we had the place to ourselves.

Even though we only spent a few days in Ecuador, it was a truly impactful time.

Through hiking, swinging, many hours filled with rain, too many waterfalls to count.. I would recommend adding Ecuador to the travel list!
